Healthy Sloppy Joe over Sweet Potato

PALEO, GLUTEN FREE, DAIRY FREE
A healthier version of the old-time classic Sloppy Joe!
Who needs buns, when you've got yummy sweet potatoes? This recipe both satisfies and nourishes your body with lots of vitamin rich ingredients!
Sweet Potatoes:
Use as many as you need. You can even cut them in half if they are large.
This recipe should cover 4-6 servings
Rub each sweet potato with a bit of Avocado Oil, and sprinkle with salt. Poke holes with a fork 6-8 times on each side. Bake for 40-45 minutes at 400° F.
Sloppy Joe Ingredients:
1 TB of Ghee or Avocado Oil (used to saute' optional ingredients)
Optional Ingredients: Chopped Onion, Green or Red Bell, Celery, Kale, Garlic
Add 1 lb. Grass-Fed, Organic Ground Beef
Combine:
8 oz. Tomato Sauce
1 TB Tomato Paste
1 TB Dijon Mustard
2 TB Worstershire (watch ingredients, I use Whole Foods 365) or Use Tamari
1 TB Apple Cider Vinegar
Combine:
1 tsp. Cumin
1/2 TB Paprika (sweet or smoked)
1 tsp. Garlic Powder
1 tsp. Onion Powder
1-2 TB Coconut Sugar (optional)
Saute' Optional Ingredients for 3-4 minutes. Add ground beef. Saute' until beef is just cooked. Add spices, and stir. Add tomato mixture, and stir. Let simmer for 8-10 minutes on low.
Top sweet potato with mixture and add optional toppings to your liking:
Grated Parmesan Cheese, Goat Cheese, Sliced Green Onions, Cilantro
